Ingredients:
4 servings
500g of Puy lentils
4 carrots
1 large onion
2 garlic cloves
2 bay leaves
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of thyme
2 vegetable stock
cubes
Preparation:
1. Rinse and soak the
lentils overnight as per instructions on the packet
2. Peel and dice the
onion and the garlic and the carrots
3. Heat up a large
saucepan and add a little oil, add the diced onion and garlic and brown on a
medium heat for 2 minutes
3. Add the lentils, the
carrots, the bay leaves, the stock cubes and 1 litre of boiling water
4. Slice the chorizo
and add it to the pan
5. Simmer over a
medium heat for 30 minutes, or until the lentils are cooked
