Quick pastry for pies, tarts and quiches

Time: quick, under 10 minutes
Diet: contains dairy, wheat

Ingredients:
For one pie/tart/quiche (diameter 28 cm)
250g of wheat flour
125g of soft butter or margarine
1/2 teaspoon of salt
3 tablespoon of sugar (for desert pie only)
8cl of lukewarm water or milk

Preparation:
If you are using real butter, ensure it is taken out of the fridge at least 3 hours before as it needs to be soft.

1. In a bowl, mix the flour and the salt (and sugar, if using to make a desert pie)
2. Add the butter in small pieces and mix with the flour with your fingers until you obtain a crumbly mixture
3. Incorporate the water or milk, mix well and form a ball with the pastry
4. Roll pastry out thinly and evenly with a rolling pin
5. Place pastry sheet in a tart/quiche buttered (or covered with baking paper) dish and pierce with a fork a few times, then use the rolling pin to remove any excess pastry from the borders of the dish
6. Fill the pastry according to the tart or quiche recipe
7. Cooking times vary according to recipe, please follow quiche/tart recipe instructions
