Goat's cheese and spinach quiche

Preparation Time: quick, under 10 minutes
Cooking Time: 30 minutes
Diet: contains dairy, wheat
 
Ingredients:
1 pastry
2 eggs
10cl of single cream
150g of goat's cheese
200g of fresh or frozen spinach
1 red onion
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of thyme
2 knobs of butter or margarine

Preparation:

1. Follow my quick pastry recipe
2. Peel and dice the red onion
3. Heat up a frying pan and melt a knob of butter or margarine, add the diced onion and brown on a medium heat for 5 minutes
3. In a saucepan, melt a knob of butter or margarine, add the spinach leaves and cook on a low heat until soft
4. Drain the spinach of excess water and dispose evenly on the pastry in the quiche dish
5. Sprinkle the fried onion on top and add pieces or slices of goats cheese on the top
6. In a bowl, beat the eggs with a whisk and add the cream, salt, pepper and thyme and pour the mixture on top
7. Cook for 30 minutes at moderate temperature (180C), or until the quiche is golden
