King prawns with coco curry sauce and rice

Ingredients:
For 2 people
150g Thai rice
250g king prawns
1 can of coconut milk
2 tablespoon of curry powder
1/2 teaspoon of chilli powder (optional)
1 onion
1 clove of garlic
Fresh coriander
Salt
Pepper

Preparation:
1. In a large pan of boiling water, cook the rice according to cooking instructions on the packet
2. Dice the onion and garlic finely
3. In a frying pan, heat up a little oil or butter and add the onions and garlic, brown for 2 minutes on a medium heat
4. Add the curry powder and the chilli powder (optional)
5. Add the prawns (if raw prawns are used, let them cook for a few minutes)
5. Then add 1/2 can of coconut milk and reduce the heat, simmer for a few minutes. Add more coconut milk as necessary to obtain the sauce.
6. Season with salt and pepper
7. Serve on a bed of Thai rice and garnish with some coriander
