Latin chicken and root vegetable broth

This hearty soup (called Sancocho in Latin America) is perfect for a lazy family Sunday at home... deliciously warming and nourishing and full of vitamins! Plus you may even have some left overs for a quick dinner on Monday!

Ingredients:
4 servings
800g chicken drumsticks
4 medium potatoes
4 carrots
1 large yucca / cassava (frozen works too! ~750g)
2 tomatoes
2 corns on the cob
1 onion
2 garlic cloves
2 bay leaves
1 bunch of parsley
1 bunch of coriander
2 chicken stock cubes
salt and pepper
250g long grain rice (optional)

Preparation:
1. Peel the potatoes, the carrots and the yucca (if using a fresh one) and cut them in medium to large chunks
2. Peel and dice the onion and the garlic finely
3. Chop the tomatoes in small pieces and cut the corns on the cob in half
4. Chop the parsley and the coriander finely
5. Heat up a large frying pan and add a little oil, add the diced onion and garlic and brown on a medium heat for 2 minutes
6. Add the chicken drumsticks, the tomatoes and brown for 5 minutes on medium to high heat, turning regularly to allow everything to brown evenly
7. In a large saucepan, bring 1.5 litre of water to the boil, add the stock cubes, the potatoes, carrots, yucca pieces, the bay leaves, salt and pepper and the corns on the cob,
 then add all the contents of the frying pan to the saucepan
8. Ensure the water is covering all the ingredients in the saucepan and simmer over a medium heat for 30 minutes
9. Meanwhile, if you would like to serve your dish with rice (optional), add 250g of rice to a pan of boiling water and simmer
9. Remove the broth from the heat and add the chopped parsley and half of the chopped coriander and stir
10. Serve the soup in a large deep plate of bowl, adding some chopped coriander on the top
11. When the rice is cooked, drain it and serve it on small plate as a side
