Ingredients:

1 cauliflower cut into pieces
500ml milk
4 tbsp cornflour
200g grated mature cheddar
3 tbsp breadcrumbs

1. Preheat the oven at 200C
2. Cook the cauliflower for 5 minutes in a saucepan of boiling water, drain and tip into an ovenproof dish
3. In a saucepan, heat up 450ml of milk
4. Meanwhile, put 4 tbsp of cornflour in a bowl, then add 50ml of milk, whisk until smooth
5. When the 450ml of milk are about to boil, add the cold milk and cornflour mixture, reduce the heat and keep stirring until it thickens

6. Add most of the grated cheddar to the sauce, continue to stir until the cheese is melted, then remove from the heat, season with salt and pepper and pour over the cauliflower
7. Sprinkle with breadcrumbs and remaining cheese on top
8. Place in a hot oven and bake for 20 minutes

9. Serve as a side for meat, chicken, fish or ham. It also makes a great simple dinner served on its own.
