Pastries filled with spinach, gorgonzola and bacon

Cooking Time: 30 minutes



Ingredients:
Serves 4
1 sheet of puff pastry
100g cut frozen spinach
100g bacon or lardons
100g gorgonzola
4 cherry tomatoes
1 egg yolk
salt & pepper





Preparation:
1. Preheat the oven at 220C
2. Cut the pastry into 4 rectangles or squares and dispose them on a baking sheet
3. Cook the spinach in a pan, then drain off excess water
4. Cut the bacon into small strips (or use lardons) and fry for 2 minutes, turn off the heat, add the gorgonzola cut into small pieces, and then the drained spinach, and the cherry tomatoes cut into quarters, season with salt and pepper
5. Spoon the contents of the pan onto the centre of pastry squares
6. Close the filled pastries by folding the pastry back onto itself, pressing the pastry where it meets to seal the sides (if rectangles), or bringing the 4 corners of to the top and pressing them together to make them stick (if squares)
7. To ensure they come out golden, brush the pastry with some egg yolk
8. Place in a preheated oven and bake for 30 minutes
