Courgette rice tomato and bacon gratin

Ingredients:
3 courgettes
1 tin of chopped tomatoes
150g basmati rice
250g lardons (or bacon cut into strips)
1 onion
4 tbsp breadcrumbs (optional)
grated parmesan
olive oil
salt, pepper, provence herbs



Preparation:
1. Preheat the oven at 180C
2. Cook the rice according to the instructions on the packet
3. Meanwhile, chop the onion, and slice the courgettes thinly
4. In a frying panheat up a little olive oil, add the chopped onion, lardons and the courgette pieces
4. Add the tinned chopped tomatoes, season with salt, pepper and provence herbs, cover and simmer for 10 minutes
5. In an ovenproof dish, place the rice and pour the contents of the frying pan on top
6. Sprinkle breadcrumbs and grated parmesan on the top
7. Place in a preheated oven at 180C for around 20 minutes
