1. Preheat the oven at 180C
2. Cook the rice according to the instructions on the packet
3. Meanwhile, chop the onion, and slice the courgettes thinly
4. In a frying pan, heat up a little olive oil, add the chopped onion, lardons and the courgette pieces

4. Add the tinned chopped tomatoes, season with salt, pepper and provence herbs, cover and simmer for 10 minutes
5. In an ovenproof dish, place the rice and pour the contents of the frying pan on top
