Preparation:
1. Peel the potatoes and carrots, cut them into chunks
2. Place them in a pressure cooker and cover with water, close the pressure cooker and cook for 15 minutes from when whistling starts (alternatively you can boil them in a saucepan for 25 minutes)
3. Meanwhile, slice the onion thinly
3. In a frying pan, melt a knob of butter, add the onion and soften for 2 minutes, then add 2 tbsp of brown sugar and reduce for another 5 minutes
4. In another pan, fry the pork chops in a little olive oil, 5 minutes on each side
