Baked egg with smoked salmon and chives

Preparation Time: 5 minutes
Cooking Time: 15 minutes




Ingredients:
Serves 4
4 slices of bread
100g smoked salmon
4 free range eggs
chives
salt & pepper






Preparation:
1. Preheat the oven at 220C
2. Lightly grease 4 ovenproof ramekins or small baking dishes
3. Place the bread slices in the ramekins, so that it roughly covers the bottom and sides of the dishes
4. Add smoked salmon pieces on top of the bread and crack an egg on top, ensuring the yolk remains in the more or less in the center
5. Place in a preheated oven and bake for 10 minutes, until the whites are cooked, but the yolks still runny
6. Season with salt and pepper and sprinkle chopped chives on top
7. Serve immediately
