Ingredients:
Makes 4 wraps
2 chicken breasts
4 tortilla wraps
150g spinach
1 tomato
grated emmental
salt & pepper
olive oil
Preparation:
1. Slice the chicken breast in half
(lengthwise, to make 2 long strips)
2. In a frying pan, heat up a
little olive oil, add the chicken and cook for 4 minutes on each side
3. Meanwhile, slice the tomato
4. Add the tomato and spinach to the
pan and cook for a further 2 minutes on a medium heat, season with salt and
pepper
5. Empty the contents of the pan onto
a plate
6. On another plate, place 1 piece of
chicken in the centre of a tortilla wrap, top with some tomato, and spinach,
then sprinkle grated emmental and fold both sides of the wrap onto the filling.
Repeat for the other wraps
7. Add a little oil to the frying pan,
and, on a medium heat, place the wraps (face down where the folds are to
prevent them from opening), brown for 3 minutes, then turn them over and brown
on the other side for a further 2 minutes
