Ingredients:
4 servings
200g fresh spinach
5 carrots
120g mascarpone
750ml water
1/2 onion
1 tbsp olive oil
Preparation:
1. Peel and slice the carrots, wash and drain the spinach, and peel and slice the onion
2. In a pressure cooker (or large saucepan with lid), fry the onion in a little olive oil for 2 minutes
3. Add the carrots and the water, then the spinach
4. Close the pressure cooker and simmer on a medium heat for 12 minutes from when it starts to whistle (if using a standard saucepan, put the lid on and simmer over medium heat for 20 minutes)
5. Blend everything together using a hand blender, until smooth
6. Add the mascarpone and blend again
7. Season with salt and pepper to taste
8. Serve with crusty baguette

I recommend this pressure cooker, very useful for quick stews and soups!
