Cod with tomato and roasted red pepper

Ingredients:
Serves 2 
2 cod fillets
150g basmati rice
200g tinned plum tomatoes
50g roasted red peppers (tinned / bottled)
1 red onion
chopped parsley
salt and pepper
  
Preparation:
1. In a pan of boiling water cook the rice according to the instructions on the packet
2. Meanwhile, in a frying pan, heat up a little olive oil, add the chopped onion and brown for 3 minutes
3. Tear the roasted red peppers into pieces and add them to the pan
4. Pour in the tin of tomatoes and mash roughly with a wooden spoon, season with salt and pepper
5. Add the cod fillets to the pan (skin side up)
7. Cook for 10 minutes on a medium heat
8. Serve the rice, fish (skin can be removed), covering it with sauce and top with chopped parsley
