Ingredients:
Serves 4
4 salmon fillets
1 ball of mozzarella
3 tomatoes
1 onion
500g new potatoes
200g green beans
2 garlic cloves
olive oil
butter
dried basil, provence herbs
salt and pepper

Preparation:
1. Preheat oven at 210C
2. Prepare 4 sheets of foil (around 20cm x 20cm)
3. Place each salmon fillet in the centre of a sheet of foil
4. Slice the mozzarella and tomatoes thinly
5. Dispose them on top of the salmon fillets, alternating the slices of mozzarella and tomatoes
6. Chop the garlic cloves finely and sprinkle on top, season with salt, pepper and herbs
7. Add 2 tsp of olive oil on each fillet
8. Close the foil loosely around the fillets, sealing the foil, and place in an ovenproof dish
9. Place in the oven for 25-30 minutes
10. Meanwhile, in a pan of boiling water, place the new potatoes (skin on) and cook for 7 minutes
11. Add the green beans and cook for a further 3 minutes, then drain
12. Slice the potatoes in half or quarters (depending on the size) and chop the onion
13. In a frying pan, melt a knob of butter, add the onion and brown for 2 minutes, then add the pieces of potatoes and the green beans
14. Brown for a further 12-15 minutes, turning occasionally
