Ingredients:
Serves 4
1 whole chicken
4 baking potatoes
2 carrots
150g frozen peas
300ml chicken stock
mixed herbs
salt & pepper
olive oil
knob of butter
Preparation:
1. Pre-heat oven at 220C
2. Place the whole chicken in a large ovenproof dish, spread a knob of butter on the top of it and season with salt, pepper and mixed herbs
3. Peel the potatoes and carrots, cut them into medium sized chunks
4. Place them around the chicken and sprinkle olive oil over them
5. Place in a hot oven and roast for 20 minutes at 220C, then reduce to 200C and return to the oven for a further 50 minutes
6. Add the frozen peas to the vegetables around the chicken, and pour 300ml of stock over them
7. Roast for a further 10 minutes
