Ingredients:
Makes 4 wraps
2 medium chicken breasts
4 tortilla wraps
1 avocado
4 sliced mushrooms
grated emmental
salt & pepper
olive oil
Preparation:
1. In a frying pan, heat up a
little olive oil, add the chicken breasts and cook for 4 minutes on each side
2. Cut the chicken breasts and the avocado into cubes
3. On a plate, place the pieces of
chicken and avocado in the centre of a tortilla wrap, add sliced mushrooms, and top with grated emmental before folding both sides of the wrap onto the filling.
Repeat for the other wraps.
4. Add a little oil to the frying pan,
and, on a medium heat, place the wraps (face down where the folds are to
prevent them from opening), brown for 2 minutes, then turn them over and brown
on the other side for a further 2 minutes
