Ingredients:
Serves 4
250g egg noodles
350g turkey fillet
1 courgette
1 onion
3 carrots
3 tbsp soy sauce
olive oil
Preparation:
1. In a pan of boiling water, cook the noodles according to the
instructions on the packet
2. Chop the onion thinly, peel the courgette and the carrots,
then run a vegetable peeler against them lengthwise to obtain thin strips (or
julienne them using a knife)
3. Cut the turkey into 2cm chunks
4. In a frying pan, heat up a
little olive oil, brown the onion for 1 minute, add the turkey pieces and cook for
5 minutes, then set aside
5. In the same pan, add a little more olive oil if required, fry the carrot and courgette strips for 5 minutes then reduce the heat
6. Stir in the cooked turkey and onions, and then the cooked
noodles
7. Add 3 tbsp soy sauce and toss everything together well
