Ingredients:
175ml sunflower oil
175g fine brown sugar
3 large eggs
140g grated carrots (3 medium carrots)
100g raisins
zest of 1 large orange (finely grated)
175g self raising flour
1 tsp bicarbonate of soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg

Preparation:
1. Preheat oven at 160C
2. In a large bowl, mix the sugar, the oil and the eggs with a wooden spoon
3. Stir in the grated carrots, raisins and orange zest
4. Add the flour, bicarbonate of soda, cinnamon and nutmeg and mix
5. Pour the mixture into an oven proof cake dish (previously covered with baking paper if required)
6. Place in the oven for 40-45 minutes, check that the centre is not runny, it should feel bouncy when pressed down
7. Remove from oven and leave it to cool for 5 minutes
