Ingredients:

2 wholegrain tortillas
1 tomato
80g fresh spinach
2 tsp green pesto
100g mozzarella

Preparation:
1. Spread a teaspoon of pesto on each tortilla
2. Slice the tomato and dispose the slices along with the spinach on half the tortillas
3. Top with torn pieces of (or grated) mozzarella and fold the second half of the tortilla on top
4. In a frying pan heat up a little olive oil and gently fry the tortillas for 3 minutes on medium-high heat, place a plate on top to ensure they flatten, gently turn over and cook for another 2 minutes, until the cheese is melted
