Ingredients:
4 servings
4 medium potatoes
6 carrots
1 courgette
1 leek (white and light green part)
chopped parsley
salt and pepper
Preparation:
1. Peel the potatoes and carrots, wash them and cut them into chunks, wash the courgette and slice it into medium sized pieces, wash and slice the leek
2. In a saucepan of boiling water, add the potatoes and carrots, simmer on a medium heat for 10 minutes
3. Then, add the courgette and leek pieces, simmer for a further 15 minutes
4. Ensure the water is just covering the vegetables, season and blend everything together until smooth
5. Sprinkle chopped parsley on the top before serving
