Baked fish fillet in foil

Cooking Time: 25 minutes

Ingredients:
2 servings
2 cod or haddock fillets
1/2 lemon
1/2 red onion
1 tomato
chopped parsley
150g basmati rice
100g spinach (optional)
salt and pepper
olive oil

Preparation:
1. Preheat oven at 200C
2. Place the fish fillets in the centre of 2 large sheets of foil (about 25cm x 35cm each)
3. Cover the fillets with thin slices of red onion, lemon and tomato, then sprinkle with chopped parsley, salt and pepper, and drizzle a little olive oil on the top of each fillet
4. Lift the sides of the foil and join them together at the top, without pushing the foil down onto the fish (for greater flavours!), then seal the ends of the foil
5. Carefully place the fish foil bags in the oven and leave them to cook for 25 minutes
6. Meanwhile, cook the rice according to the instructions on the packet
7. If serving with a side of spinach, cook the fresh or frozen spinach according to the instructions on the packet
8. Serve the rice, spinach, and fish fillet (with the juice from the foil)
