Ratatouille and ham quiche

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Tip: for this recipe, use left overs of ratatouille or make more to have as a side another day! 

Ingredients:
pastry
3 eggs
100ml of mascarpone or creme fraiche
150g of ratatouille
2 slices of ham
grated emmental

Preparation:
1. Follow my quick pastry recipe (a ready made pastry will work too!)
2. Cut the ham into strips and place them on the pastry, in the quiche dish
3. Add the ratatouille evenly on top
4. In a bowl, beat the eggs and the mascarpone (or creme fraiche) with a whisk, add salt and pepper and pour the mixture on top
5. Sprinkle grated emmental on the top
7. Place in preheated oven at 180C, and cook for 30 minutes or until the quiche is golden
