Egg fried rice with chicken and peas

Cooking Time: under 20 minutes





Ingredients:
Serves 2
150g basmati rice
2 eggs
1 chicken breast
4 tbsp frozen peas
1 tbsp soy sauce
olive oil





Preparation:
1. In a large saucepan of salted boiling water, add the rice and cook according to the instructions on the packet
2. Meanwhile, chop the chicken breast into small pieces
3. In a frying pan, heat up a little olive oil and add the chicken pieces, cook for 5 minutes on medium-high heat
4. Add the frozen peas and cook for a further 3 minutes
5. Drain the rice and add it to the pan, break the eggs in and mix everything well, whilst it continues to cook for a further 2 minutes
6. Add the soy sauce and stir well
7. Serve hot
