Home-made tortilla base vegetables and goats cheese pizza

Ingredients:
Makes 4 pizzas
4 medium or large tortilla wrap
grated mozzarella
1 goats cheese
sliced mushrooms
1 courgette
1 onion
1 tin tomato puree
2 tbsp sugar
olive oil

Preparation:
1. Heat up oven at 200C
2. Peel and slice the courgette, and chop the onion
3. Heat a little olive oil in a non stick frying pan, add the slices of courgette and cook for 3-4 minutes until slightly brown, turning them half way through, place in and bowl a set aside
4. In the same pan, add a little more olive oil, add the chopped onion and saute for 2 minutes, reduce the heat, add 2 tbsp sugar and gently cook the onions for 5 minutes, stirring occasionally, until caramelised
5. Place a tortilla wrap on a baking sheet, on an oven proof tray
6. Spoon some tomato puree in the centre and spread evenly, leaving a 1cm edge all around
7. Sprinkle the grated mozzarella, dispose the slices of courgette, sliced mushrooms, caramelised onions and slices of goats cheese
8. Place in hot oven for 6 minutes
