Ingredients:
Makes 10 large croquettes
1 large chicken breast
4 tbsp frozen peas
250ml milk
1/2 onion
1 garlic clove
3 tbsp cornflour
1 pack of breadcrumbs
1 egg
salt & pepper
olive oil
Preparation:
1. Chop the chicken breast, the onion and garlic finely
2. In a frying pan, heat up a little olive
oil, add the onion and garlic and the small pieces of chicken and cook on
medium heat for 2 minutes
3. Add the frozen peas and cook for another 3 minutes
4. With the heat still on, sprinkle 3 tbsp of cornflour on top
of the mixture and add the milk slowly, stirring continuously, until a thick
paste is achieved, season with salt and pepper
5. Place the mixture in a bowl or plastic box and let it cool
down (it can be placed in the fridge)
6. Beat the egg in a bowl, and pour breadcrumbs on a little
plate
7. Make a ball with the cooled down mixture and dip into the
egg, then roll it in the breadcrumbs, repeat with the rest of the mixture
8. Once you have prepared all the croquettes, heat up a little
olive oil in a frying pan, place the croquettes, and fry them for 5 minutes,
turning them occasionally and adding more olive oil as required
9. Serve hot
