Fish croquettes

Ingredients:
Makes 20 croquettes
300g cod fillet
250ml milk
1/2 onion
1 garlic clove
3 tbsp cornflour
1 pack of breadcrumbs
1 egg
salt & pepper
ground nutmeg
chopped parsley
olive oil
  
Preparation:
1. In a large saucepan of boiling water, cook the cod fillets, then drain and break into small chunks with a fork
2. Meanwhile, chop the onion and garlic finely
3. In a frying pan, heat up a little olive oil, add the onion and garlic and the small chunks of fish and cook on medium heat for 5 minutes
4. With the heat still on, sprinkle 3 tbsp of cornflour on top of the mixture and add the milk slowly, stirring continuously, until a thick paste is achieved, season with salt, pepper, chopped parsley and ground nutmeg
5. Place the mixture in a bowl or plastic box and let it cool down (it can be placed in the fridge)
6. Beat the egg in a bowl, and pour breadcrumbs on a little plate
7. Make a little ball with the cooled down mixture and dip into the egg, then roll it in the breadcrumbs, repeat with the rest of the mixture
8. Once you have prepared all the croquettes, heat up a little olive oil in a frying pan, place the croquettes, and fry them for 5 minutes, turning them occasionally and adding more olive oil as required
9. Serve hot
